In Hindi this recipe is called “Pissa adrak-lussan”.
This is an extremely useful paste which is essentially a 50/50 blend of Garlic and Ginger. You can buy this ready made in the shops; however these usually contain preservatives and vinegar which will add unwanted flavours to your dishes. Fresh paste is easy to make and far superior!
Ingredients
- 150g Fresh Garlic Cloves, peeled
- 150g Fresh Ginger, peeled
- 150ml Water
Directions
- Add the garlic and ginger to a food processor and blend
- Add the water and continue to blend until a smooth paste is achieved. Remember to scrape down the sides of the food processor so that everything is blended evenly.
- Portion out into 1tbsp amounts. I use small salad dressing pots for this.
- Freeze for no more than six months.
What have we created?
The yield from the above amounts is 20 1tbsp portions. All things being equal this means that each 1tbsp portion has 7.5g of garlic and 7.5g of ginger, suspend in 7.5ml of water.
